As spring begins, we invite you to step away from your usual routine for a moment and discover a creation born of the vision and talent of our chef, Younes: the Vegetal Symphony.

Vegetarian restaurant dish: a bowl of colourful vegetables (purple cauliflower, broccoli, leek, snow peas, cherry tomatoes, yellow courgette) served on a bed of hummus, accompanied by vegetable balls and vegetable mince on a beautifully laid table
A colourful plant-based feast

A brief history of a cuisine on the move

Long regarded as a niche option, plant-based cuisine has often been reduced to a simple mix of vegetables and pulses, frequently lacking in variety. Yet the textures and flavours can be combined with just as much culinary flair as in traditional cuisine.

It has everything it takes to surprise and win over even the most sceptical. That is precisely the challenge Younes has set himself.

A dish with a twist

With this dish, our chef wanted to explore a different approach to cooking. Using high-quality ingredients and daring to create unexpected combinations to offer something that isn’t easy to make at home.

On the menu: creamy homemade hummus and seasonal vegetables paired with plant-based proteins, for a dish that’s as nourishing as it is delicious.

A touch of the Mediterranean

True to his roots, Younes infuses this creation with the warmth and generosity of the Mediterranean that are so characteristic of him. And because nature changes with the passing months, the Vegetal Symphony transforms too, in step with the seasons and his inspiration.

A dish that brings people together

Whether you’re a committed vegetarian or simply curious, this dish has been designed to ensure no one goes hungry. It can be served, as you wish, with our fries, boiled potatoes or homemade croquettes.

Because good food brings people together, we’re proud to offer you a dish that makes no compromises.
