Chef Younes: passionate chef at Ultieme Hallucinatie in Brussels

Today, we invite you to discover the story of Younes, one of the chefs who brings the House’s cuisine to life.

From Moroccan roots to world cuisines

Originally from Morocco, Younes discovered a taste for cooking at a very early age thanks to his aunt, the woman who raised him and passed on to him a love of traditional cuisine. This passion led him to train at a culinary training centre before setting out on the road. Spain, South America, Luxembourg, Germany… his journey is shaped by travel, encounters, and inspiration, always driven by a desire to learn and to challenge himself.

Upon arriving in Belgium, he had the good fortune to meet the right people and to grow within renowned establishments such as Le Mess de la Villa Lorraine, La Taverne du Passage, Le Cercle des Voyageurs, Le Café Béguin, and The Chairman. Each of these experiences refined his cooking and strengthened his culinary identity.


A new adventure at the Ultieme Hallucinatie

It was ultimately with us that he chose to lay down his knives. The meeting with the team and the atmosphere of the place convinced Younes to join the adventure. A new chapter, fuelled by the desire to push himself further and to offer a cuisine that truly reflects who he is.

When asked which dishes he is most proud of, Younes cites without hesitation the Grilled Salmon with the stoemp of the day, the Ultieme Burger, and the Vegetable Symphony, creations that mirror his style, without forgetting the classics he enjoys revisiting, such as seafood Waterzooi.

A story that continues to be written every day in our kitchen…

and one that now only remains to be tasted!
