Dear Friends of the Ultieme,


Summer is slowly settling in, and with it comes our traditional annual break... 
From July 12 to August 19, we’ll be taking a break. Just enough time to catch our breath before new stories and new encounters.


But before we close this chapter, we invite you to explore our menu a little further and meet someone who is indispensable to our team.


At the table, the conversation turns to travel and craftsmanship, specifically that of our grilled salmon, a traveling fish, a philosopher in his spare time, and a tenacious hero of the rivers of the North.
You’ll also meet Saif, our maître d'hôtel, who, between one encounter and the next, offers a smile and a kind word, always in the right place at the right time. A discreet art that, too, deserves our attention.


It’s enough to make you want to step through our doors one more time before the summer break. For a few moments suspended in time, like the final notes before a gentle silence, or the first notes of a summer that is just beginning...
