Saïf, maître d’hôtel at De Ultieme Hallucinatie: when service becomes an experience

At De Ultieme Hallucinatie, service is never merely a simple gesture. It begins long before the guest takes their seat, in an unseen attentiveness, an almost instinctive presence.
Saïf, the restaurant’s maître d’, embodies this discreet artistry, where hospitality, timing and human interaction shape far more than just a meal.
But ultimately, what is it that truly transforms service into an experience?
Between high standards and humanity: the daily life of a maître d’hôtel
Saïf joined us in 2021, having worked his way up through the Brussels hospitality industry. Kitchen assistant, waiter, barman… He worked his way up through every role before becoming a maître d’hôtel. This career path has shaped his very practical approach to the job today, where nothing is theoretical and everything happens in the moment.
Here, it’s not about ‘carrying out a service’, but about maintaining a rhythm. About adapting, sensing the atmosphere, and following up when needed - all without drawing attention to it. A smile, active listening and getting things just right aren’t principles: they’re second nature.
Ultimately, what he remembers most are not the rules, but the encounters. Those that make an evening memorable, those that take you by surprise, those that give the profession its unpredictability and energy.
And deep down, it all comes back to the same idea: at the Ultieme, simply serving isn’t enough. It’s all about how you live in the moment.

Service as a living experience
As you will have gathered, at De Ultieme Hallucinatie, service is not just about precision, but also - and above all - about being present. Through Saïf’s eyes, we discover a restaurant where people remain at the heart of everything, right down to the simplest of gestures.
And sometimes, all it takes is a smile at just the right moment for the experience to truly begin. The best thing is still to experience it for yourself…
